The ancient history and culture of Kayseri has doubtless brought together a rich cuisine and food culture.  The pastrami and soujouk as well as the Turkish ravioli that have come to be identified with Kayseri have a special place both at home and in abroad.  Kayseri cuisine mostly consist of floury and meaty foodstuff.  The most commonly cooked local dishes of Kayseri include arabaşı, tandır böreği, katmer, yağlama, yağ mantısı, su böreği, fırınağzı, bezdirmeç, Develi cıvıklısı, sucuklu , pastırmalı and kıymalı pide.
